Xiangyu Xylanase is produced by submerged fermentation from high quality Trichodema Reesi as well as special post-treatment process using proprietary technologies. It can be widely used in bakery, brewing, feed, Xylo-oligosaccharide and wheat further processing and etc.
II. Definition of Activity:
The amount of Xylanase needed to degrade and liberate 1 μmole of reducing sugar from oats xylan solution with concentration 10mg/ml at 50°C and pH4.8 is defined as one enzyme activity unit and marked with u/g (u/ml).
1. Effective Temperature: 30-65°C, Optimum Temperature: 45-60°C
2. Effective pH: 3.0-7.0, Optimum pH: 4.8-5.5
IV. Working Mechanism:
Xylanase is a complex enzyme series which can degrade xylan to Xylo-oligosaccharide and xylose which mainly include β-1,4- xylanase and β – xylosidase. Generally, the β-1,4- xylanase acts on the xylan Glycoside bond inside of the main chain and degrades the xylan into oligosaccharide; β – xylosidase hydrolyzes the end of the Xylo-oligosaccharide and mainly cuts Xylo-oligosaccharide and xylobiose which contributes to completely degrade the xylan into xylose.

VI. Application and Recommend Dosage:
1. Baking Industry:
a. Enhance the dough elasticity with easier making;
b. Optimize the gluten network of the dough;
c. Shorten the process of the dough formation and stabilization;
d. Magnify the dough volume significantly;
e. Improve the water holding capacity of the bakery food;
f. Improve the taste and skin color of the bakery food.
Reference dosage: 2-15g/100kg flour (base on 290000 u/g), mixed with Fungal Alpha-Amylase or refined Alpha Amylase will performance better. Or add according to the formula of various ingredients.
2. Feed Industry:
a. Degrade effectively the xylan which is the anti-nutritional factors in plant feed; reduce the viscosity of chyme in gastrointestinal tract.
b. Improve the secretion and the enzyme activity of endogenous enzyme, stimulate the digestion and absorption of nutritional substances, and improve the feed rate of utilization.
c.Promote the growth of beneficial bacteria in animal gut and restrain the breeding of harmful bacteria. Improve the survival rate and immunity of the animals.
d. Enhance the absorption of nitrogen and phosphorus and reduce the environment pollution.
Reference dosage: 10-50g/T of feed raw material (base on 100,000 u/g ).
3. Brewing Industry:
It can be widely used in wheat beer (saccharification process), wine (squeezing process) and clear wine and etc.
a. Decompose Xylan or pentosan, reduce the viscosity of wort and other extract substance;
b. Resolve the turbidity of the beer caused by xylan or pentosan or other carbonhydrate;
c. Especially appropriated for the wheat beer or beer saccharification process during which the wheat used as auxiliary materials.
d. Increase the yield of starch or sugar;
Reference dosage: 0.1-0.5L/t dry substance (base on 50,000 u/ml), mixed with β- Glucanase or neutral protease will performance better.
4. Fruit juice Industry:
a. Enhance the speed of high concentration
b. Obviously improve product yield and quality
Reference dosage: 0.1-0.2L/t dry substance (base on 50,000 u/ml ), mixed with Pectinase and refined Alpha Amylase will performance better.
5. Xylo-oligosaccharides Production Industry:
Reference dosage: 0.2-0.4L/t dry substance (base on 50,000 u/ml), keep for 12-24 hours.
Should be stored in a cool, dry and well-ventilated place; protect from direct sunlight, heat and dampness; avoid storing with poisonous and harmful substances.
VIII. Shelf Life:
Enzyme activity remains ≥ 90% after 12 months at room temperature 25°C.
